The count is how many threads are in a square inch. So in short a 300 count 1 ply sheet will actually have the same feel as a 600 count 2 ply, because the yarn thickness increases with the 2 ply otherwise it would be too heavy.

As far as thread count goes 250 to 300 thread count is a good fabric that will last awhile. For smoother softer luxury feel a 400 to 600 count is better.
